OUR FAMOUS SOURDOUGH
Every loaf begins with our sourdough mother, no commercial yeast, ever. Just our own culture, filtered water, sea salt, and time. The dough is hand-stretched, shaped twice, and cold-risen for at least 20 hours before it hits our steam-injected deck oven. The result is a thick, chewy-crunchy crust and a crumb with real depth of flavor.
We mill our own proprietary flour blend from Giusto’s Vita Grain, organic wheat, spelt, and rye, 30% whole grain. Available as boules, baguettes, sandwich loaves, and seasonal pain rustique varieties.
